GLOBAL TRENDS – VARIETY AND LABELLING
Cooking shows have never been more popular. People are enjoying experimenting with new and exciting recipes, using unusual ingredients, or foods from many different cultures. The internet is also greatly assisting this pursuit of cooking and food preparation into new and “ un-chartered waters” for many of us who did not previously look to vary one’s skills at home. Authentic recipes and foods and condiments processed to a minimum , are also high in demand. The use of natural foods and ingredients is of course desirable. The big question here is what is “natural”. To this end, labels will become much more important and food manufacturers are realising the need to provide suitable and relevant information to consumers. Unfortunately, governments around the world cannot come to some basic minimum requirements for nutritional information on labels. You may also begin to see reference to the term, “clean labels”. This is a move, desirable from my point of view as a consumer, by food manufacturers to remove the clutter of information on labels, reduce the list of ingredients( does the food then become more natural?), with the overall objective of allowing the consumer to be more informed as to what he is really buying and what he really is about to eat.
